**Lemon Pepper Chicken Skewers**
**Ingredients:**
**For the Chicken Marinade:**
– 2 lbs boneless skinless chicken thighs (or chicken breast), cut into bite-sized pieces
– 2 tbsp paprika
– 2 tsp black pepper
– Zest from one lemon
– 1 tbsp fresh lemon juice
– 3 cloves garlic, finely minced
– 2 tsp salt
– 2 tbsp olive oil
**For the Lemon Pepper Garlic Butter:**
– ½ cup salted butter, softened
– 2 tsp black pepper
– 2 tsp paprika
– 1 tbsp fresh lemon juice
– Zest from one lemon
– 1 tsp honey
– 1 tsp garlic, grated or finely minced
**Instructions:**
1. **Soak Skewers:** If you’re using wooden skewers, soak them in water for 15-30 minutes to prevent burning.
2. **Marinate Chicken:** In a bowl or Ziploc bag, combine chicken pieces with all the marinade ingredients. Mix well and let marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.
3. **Prepare Lemon Pepper Garlic Butter:** Mix together all butter ingredients in a bowl. Set aside 2 tbsp for basting later.
4. **Skewer the Chicken:** Thread the marinated chicken pieces onto wooden or metal skewers, packing them tightly.
5. **Cook the Skewers:**
– **Air Fryer Method:** Preheat to 400°F. Cook for 7-8 minutes, then baste, flip, and cook for another 6-7 minutes.
– **BBQ Method:** Grill over medium-high heat for 5-6 minutes per side, basting before and after flipping.
– **Pan-Fried Method:** Cook in a pan over medium-high heat for 6-7 minutes per side, basting before and after flipping.
6. **Finish and Serve:** Once cooked through, baste with the reserved lemon pepper garlic butter. Serve immediately.
