Lightened-Up Cheese-Stuffed Flatbread

Ingredients:
Dough: 2 cups flour (whole wheat optional), 1 tsp salt, 1 tsp sugar, 1/2 tsp yeast, 3/4 cup water, 2 tbsp olive oil
Filling: 1 cup part-skim mozzarella, 1/2 cup feta, 1/2 cup ricotta, 1 egg (optional), 1 tbsp parsley (optional)
For Cooking: 2 tbsp light butter, olive oil spray
Instructions:
Make Dough: Mix yeast and sugar in water. Combine with flour, salt, and olive oil. Knead, rise for 1 hour.
Prepare Filling: Mix cheeses, egg, and parsley.
Assemble: Roll dough, add filling, fold edges, flatten. Cook in a skillet (3-4 mins per side), brush with butter, bake at 375°F for 10-15 mins.
