Ingredients
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
4 cups green cabbage, shredded
1 cup diced tomatoes (canned or fresh)
1/2 cup beef broth
1 cup shredded cheddar cheese
2 tablespoons olive oil
Chopped fresh cilantro, for garnish
Sour cream, for serving (optional)
Direction
1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
2. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula, about 5-7 minutes.
3. Stir in the chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). Mix well to combine.
4. Add the shredded cabbage, diced tomatoes, and beef broth to the skillet. Stir everything together and cover the skillet. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender.
5. Remove the lid and sprinkle the shredded cheddar cheese over the top. Cover again for a few minutes until the cheese is melted.
6. Serve hot, garnished with chopped cilantro and a dollop of sour cream if desired.
